New here and just wantin to see whats up for the upcoming opener! Ive been fine tuning some new lures and got a new pair of waders! Ill be out at midnight!!!

Low Calorie Lemon Walleye
6 walleye fillets                                      
1/2 cup flour                                       
1 1/2 cups cornmeal                                
2 eggs, beaten
1 T. lemon juice
1/8 tsp. garlic powder
Salt & Peper to taste

Sprinkle lemon juice over top of fish.  Set aside for 10 minutes.  Mix cornmeal and flour together.  Salt and pepper fish fillets; dip in egg batter.  Roll in cornmeal and flour mixture and place in shallow baking dish.  Sprinkle with garlic powder to your liking.  Bake, uncovered, at 350 degrees until golden brown.  Turn and bake until other side is brown.

Pan-fried Walleye

Walleye fillets
milk or “Half and Half” for breading
bread flour – (light coding)
spinach
1 tablespoon butter
balsamic vinegar
½ squeezed lemon
mince garlic
 
Garnish: 
½ cup almonds
1/3 cup white wine
4 oz (canned) mushrooms
1 teaspoon cilantro

Bread walleye by dipping first in milk or Half & Half and then covering in bread flour. Begin by pan frying fillets in butter. Always cook the biggest fillets first. While fish is browning, sautée spinach with butter, balsamic vinegar, lemon juice and mince garlic in a separate pan. Add ingredients to taste. When fillets are cooked, place them on a bed of sautéed spinach. Cook almonds, white wine, mushrooms and cilantro in fish pan and then spoon mixture on top of fish.

1 c. flour
¼ tsp salt
1 tsp. Original Mrs. Dash
1 c. milk
½ c. Canola Oil
 
 
Begin heating the oil. Mix the flour, salt and Mrs. Dash in a shallow long container. In the meantime either cut fillets to chosen size or use whole fillet. Soak in milk for 30 seconds, then coat in flour mixture on all sides. Carefully place fillets in the oil and cover fry pan. Turn fillets when the downside is brown and repeat. Eat immediately – leaving fillets in the pan will dry them out. Serve with lemon juice or tartar sauce.
