Roast Rabbit

Roast Rabbit
 
1 dressed rabbit (approximately 3 lb), cut into pieces
1 c. flour
1 tbsp sage
½ tsp pepper
½ c. butter
2 c. water
1 onion
 
Cut rabbit into quarters. Mix flour and spices in a bowl, roll rabbit pieces in flour mixture. Melt butter in frying pan and brown rabbit. Place rabbit in roaster with water and butter left from the frying pan. Add onion. Bake 1 ½ hours at 350 degrees. Flour gravy can be made with the drippings. Serve with mashed potatoes, or boiled potatoes and steamed vegetables.
