Goose Jerky

Goose Jerky
 
12 tsp canning salt
2 tsp pepper
1 tsp red pepper
1 ½ tsp cardamom
1 tsp marjoram
3 tsp Accent
2 tsp garlic powder
1 ½ tsp celery salt
3 tsp Morton Tender Quick
15 tsp maple syrup
10 tsp white sugar
1 tsp brown sugar
 
Dissolve ingredients in 2 quarts of warm water
 
Cut 5 lbs of goose meat into thin strips.
 
Place meat into brine. Cool and marinate in refrigerator for 24 hours. Smoke or add liquid smoke to taste, and bake in over at 170 degrees for approximately 2 hours per side.
