1 (7 oz) salmon fillets, boned and seasoned on both sides
1/3 c. raw cashews
1 pinch cayenne pepper
1 tsp. sugar
2 T. olive oil
Salt and pepper to taste

Season cashews with cayenne, sugar, salt and pepper.  Roast in a pre-heated oven at 350 degrees for 10-15 minutes.  Let cool and chop fine.  Roll both sides of salmon fillets in cashew crust until well coated.  In a hot saute pan, add 2 T. olive oil and sear fillets on both sides.  Finish in preheated 350 degree oven for 7 minutes.
